salmon in thai food? trust me.

This dish borrows some ingredients typically found in a pad phet, like eggplants and Thai basil, but this is home cooking-it’s always good to make use of what’s in your fridge. That said, a true pad phet would be much spicier and have little to no sweetness, whereas this dish has a bit more balance-so it’s somewhere in between.
Also, I want to clarify something about pad phrik khing because I’ve received hundreds of comments on ua-cam.com/video/z4IscgEbWoA/v-deo.html where people insist I mean pad prik gaeng. No-I mean prik khing! Historically, this dish was always called pad phrik khing, and the spice profile should be sharp, like ginger-though ginger itself isn’t in the paste. In older Thai cookbooks, chili pastes were referred to as prik khing, not prik gaeng, which is a modern reinterpretation.

I'm 'Pino...that's Filipino for everyone who only know's "Pinoy".... but being of that culture, rice and eggs is what I grew up on and a staple in our family. if you had nothing else, rice and a fried egg with crispy white edges or two would fill the belly and if you had ANY kind of meat protein, that was a bonus. Your eggs look fantastic!!

How did they turn out?
For every deep fried, you need to increase the heat at the last to squeeze the oil out… this is the most simple technic.

Fun fact : Not every Thais prefer to eat their fried eggs with fish sauce. Maggie, soy sauce, chilli sauce are also among their choices.
That’s a great combination, as well as with golden mountain sauce too. Of course every Thai has a preference to how they eat a certain dish. This is simply my preference on this day but now that you’re remaining me I’ll be making this with Maggi this week :). Thanks for watching ❤️

Not sure if it would work with Thai omelet … but many Thai cooking videos recommend a second fry at the highest temperature which tends to make the product much crispier and less oily.
Definitely nice technique for certain fried items but I haven't tried it for eggs although seems a bit unnecessary.

I always do Khai Jiao Moo Sub with no heat oil method. Normally we always wait until the oil heat up before dropping the eggs in the wok, but I saw some clips that they drop the eggs into the oil before turning on the fire. So I try it and it turn out really well. (I never try this method with normal Khai Jiao without Moo Sub.)

I love the science vibe of this video - when I was learning to cook somebody suggested I buy a dozen eggs and just try making small omelettes. By the time I’d gone through six, I had the hang of it and it built a lot of confidence! So assuming you’re not a vegan eggs are a pretty good way for people to experiment and learn some basic cooking. It would be cool to see your ratings of each omelette on one screen like in a table or diagram at the end. By the way, that cooktop looks like a jet engine!
